Bring to a boil, reduce to a simmer, and cook until the lentils are just tender, about 25 minutes. Drain.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">While the lentils are cooking, preheat a grill over medium heat (375\u2013400\u00b0F).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0In a medium bowl, combine the remaining 1\/4 tsp salt, oil, shallots, vinegar, mustard, honey, garlic, and pepper.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Transfer 2 tbsp of the dressing to another bowl. Add the chicken and toss to coat. Set the remaining dressing aside for serving.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0Place the chicken and peach halves (cut side down) on the grill. Cook the chicken for about 5 minutes per side, or until it reaches 165\u00b0F (74\u00b0C). Grill the peaches for about 5 minutes, until lightly charred and softened.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Transfer the chicken and peaches to a cutting board and let rest for 5 minutes. Slice the chicken and cut the peaches into bite-size pieces.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Divide the warm lentils among 4 plates. Arrange the chicken and peaches over the top, then sprinkle with mint and basil.
