And boy, do I have a delicious feast for you! This chicken taco soup is my answer to all of that in one easy recipe!<\/p>\n<p>This recipe is a little different from our classic taco soup, which has a ground beef base and a brothy tomato finish. This version instead takes inspo from chicken tacos and has juicy shredded chicken, two kinds of canned beans, sweet corn, and tomatoes with chilies. Then I stir in cream cheese until the broth turns creamy and tangy without feeling heavy. I also cook the chicken right in the broth so it soaks up all that Tex-Mex flavor, then shred it and add it back at the end so every bite stays tender. This taco chicken soup is great for meal prepping, too! My family will happily enjoy the leftovers of this soup all week long!<\/p>\n<div class=\"block-callout icon-callout\">\n<div class=\"block-callout__innerBlocks\">\n<ol class=\"wp-block-list\">\n<li><strong>My chicken breasts were pretty huge, so I only needed two for the whole batch.<\/strong> They were just shy of 2 lbs total. You can also use boneless chicken thighs, or bone-in breasts or thighs. Cook the chicken to 165\u00b0F and remove the bones when shredding.<\/li>\n<li><strong>Drain and rinse the beans and corn.<\/strong> This helps rinse away extra sodium and keeps the broth from getting too salty! You can always season to taste at the end if needed.<\/li>\n<li><strong>Whisk in the cream cheese until combined.<\/strong> It may look speckled or a little lumpy at first. Just keep whisking and it\u2019ll smooth out as it melts. Room temp cream cheese will mix in a little easier (but cold from the fridge works too!)<\/li>\n<li><strong>Make it dairy-free.<\/strong> You can use a plant-based cream cheese, or leave the cream cheese out altogether for a non-creamy chicken taco soup.<\/li>\n<li><strong>Use shredded chicken for a shortcut.<\/strong> Pre-cooked shredded chicken will work here, but you\u2019ll lose a little flavor because you\u2019re not cooking the chicken directly in the broth. Saut\u00e9 the onion and bell pepper, add the taco seasoning, and then add the broth, tomatoes, beans, and corn, and simmer until the veggies are tender. Stir in the shredded chicken at the end to warm it through.<\/li>\n<li><strong>Add your favorite chicken taco toppings.<\/strong> Try sour cream, jalape\u00f1o slices, pickled red onions, avocado, shredded cheese (I\u2019d go for a Mexican cheese blend if you\u2019ve got it), or crushed tortilla chips. Cut the lime in half; juice one half and reserve the other half to slice for serving.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Coat the chicken breasts evenly on all sides with taco seasoning and set aside.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Heat the olive oil in a large pot over medium-high heat. Add the onion and bell pepper and cook for about 5 minutes, until softened but still with a little bite. They will continue cooking in the soup.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Push the softened onions and peppers to the side so the bottom of your pot is visible. Sear breasts on both sides for 5 minutes per side, until lightly browned.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Pour in the chicken broth and canned diced tomatoes with chiles (with juices). Stir well, scraping up any browned bits from the bottom of the pot. Increase the heat to bring the soup to a boil, then reduce to medium and simmer for 30 minutes.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Add drained and rinsed black beans, pinto beans, and canned corn.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Continue simmering until the chicken reaches an internal temperature of at least 165\u00b0F.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p>Remove the chicken from the pot and shred it using two forks. Set aside.<\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Add the cream cheese to the soup and whisk until melted and fully incorporated. It may look a little chunky at first, but this is normal and does not mean it has curdled! Keep whisking, and it will smooth out as it melts. For easier mixing, you can whisk the cream cheese with a ladle of hot broth in a separate bowl, then stir it back into the pot.<\/span><\/p>\n<\/li>\n<li id=\"wprm-recipe-156416-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\">\n<p><span style=\"display: block;\">Once the cream cheese has dissolved into the broth and the texture of the soup is nice and creamy, add the lime juice, fresh cilantro, and the shredded chicken back. Taste and adjust seasoning as needed. You can also make a <strong>homemade taco seasoning<\/strong> if you\u2019ve got a well stocked spice drawer (<strong>chili powder, smoked paprika, cumin, cayenne, oregano, salt, and black pepper<\/strong>). Use about <strong>2 Tbsp homemade seasoning<\/strong> to replace the<strong> 1 oz. packet.<\/strong><\/span><br \/>\n<span style=\"display: block;\">***We use <strong>Better Than Bouillon<\/strong> for its quality and to keep our broth costs low.<\/span><br \/>\n<span style=\"display: block;\">****I used<strong> Rotel<\/strong>, but <strong>any diced tomatoes with chilis will do<\/strong>. I went for mild so I could <strong>adjust the spice level<\/strong> on my own, as-needed! I didn\u2019t add any extra spice, but you may want to<strong> add more to taste<\/strong> at the end by stirring in some<strong> red pepper flakes<\/strong> or <strong>cayenne<\/strong>.<\/span><br \/>\n<span style=\"display: block;\"><strong>Try it in the slow cooker.<\/strong> This recipe uses similar ingredients to our slow cooker chicken tortilla soup, so I\u2019m sure it would work well in the crockpot too!
